Potato Dumplings
(Potato Balls)
Ingredients
2 lbs. potatoes
2 oz. semolina
3 oz. flour
2 eggs
salt
pepper
nutmeg
marjoram
Preparation
Wash the potatoes and boil. While still hot,
peel the potatoes and mash them. Add all the other ingredients and knead
into a firm dough. Form the dumplings. Drop into boiling salt water and
let simmer for about 20 minutes until the dumplings swim on top.
